In recent years, many researchers have focused on the main aspects of functional food, that provide a health benefit beyond the basic nutritional functions. Heavy metals are widely found in our environment and have adverse health effects in human metabolism.Conventional treatment against heavy metals toxicity is based on chelatation therapy with several adverse effects. The aim of project is to develop, test and validate functional foods based on selenium nanoparticle obtained by two lactic bacteria and testing its ability to annihilate toxic effects induce by cadmium by in vivo tests.
